Moms who make homemade chocolate lollipops, etc.

I have a few questions that would be VERY helpful if you could answer for me...
Where do you buy your moulds?
Which design is the most popular?
What brand of chocolate do you use?
What kind of quantity do you do when you make them?
and
How do you temper your chocolate?

Where do you buy your moulds? I got mine at grandmas chocolate shope on wantagh ave, south of sunrise hwy, and ac moore.
Which design is the most popular?
What brand of chocolate do you use? grandmas chocolate is really good, also chocolate duck in farmingdale on main st. is really good too

What kind of quantity do you do when you make them? I made a small batch of chocolate at a time.

How do you temper your chocolate? I put a small amt. of water in a pot and then placed another pot on top of that and put a little bit of chocolate in at a time and mix.. dont let sit too long it will start to burn.

I make them for special occassions. I get the molds at Michaels, AC Moore or on Ebay. I bought a chocolate melter on QVC that came with a ton of molds, sticks and tools and it was around $25. I highly recommend it. It heats the chocolate perfectly and comes with two pots.

got everything I needed from Emily's chocolate shop in Nesconset. Easy and affordable.

I may tons of chocolates. I get my molds at Candy Lane in West Islip and The chocolate duck in farmindale. The man in the chocolate duck though is not very nice and not helpful at all.
Best chocolate is Merkens. Wilton chocolate and the brand from ac moore is gross and tastes like wax.
I melt my chocolate in the microwave. I do it one minute at a time. I make large quantities and I find it much easier than using a double boiler. I started with the double boiler in the beginning. The best part about making chocolate is that if it breaks you can remelt it and do it again.

its called luster dust. It gets put on like you would eye shadow and you use and eye shadow applicator. Its easier than trying different color chocolates and painting the molds.

I do this on the side for a living=I only go to the chocolate duck, I use their best chocolate--brain fog do not remember the name--I am thinking Merkers?
believe it or not--you can use the microwave, I dk...I love all molds..hard to say.
What do u need it for I might have some.

The reason I ask is this is the industry I am in and I am curious to how the consumer makes the product.
BTW - We sell a tempering machine if anyone is interested Chat Icon You can temper up to 5-6 lbs at one time.

I took a class on baking and we learned all about chocolate. best thing to do is invest in a candy thermoeter. milk chocolate should not ever go over a certain temp., and a thermometer is the best way to keep it down.

eta - when melting it should never go above 115 F
