sauteed string beans in oil or butter with lemon and garlic (could also be steamed, just omit the butter or oil but keep the flavorings).
tossed salad (like lettuce, mixed greens, tomatoes, cucumbers, bell peppers)
candied carrots (can you use a microwave?). You take frozen carrots, sprinkle them with any combination of butter, honey, maple syrup, brown sugar and heat them up.

You say no oven, but I'm assuming you can use the top of the stove?
I love honey mint carrots: cook baby carrots, drizzle honey and sprinkle with mint flakes.
broccoli: I sautee garlic in butter, then add some chicken stock. Add in broccoli and cook til tender crisp.
corn: cook til hot, then add butter and chopped basil.

I love roasted brussel sprouts with pancetta. But since you can't use the oven, sauteed is just as good.

Thanks everyone! I can use the top of the stove, yes. I think I will try Brussels sprouts, everyone in my family loves them
