Need some fresh ideas for chicken thighs and drumsticks please!
Looking for some new ideas to switch it up! Thighs and drumsticks are SO cheap, but I'm getting sick of BBQ sauce, coated in panko/breadcrumbs/crushed tortilla chips, or just plain roasted with lemon & herbs.
Could I make them like buffalo wings? marinated in frank's and baked in the oven.. then served with bleu cheese?
I need some new and exciting ideas please! My growing belly and my 2 bored eaters will thank you!

Yep.. you can do them Buffalo style if you like.. but I don't like the dark meat wasted on buffalo sauce.

A really easy recipe for chicken pieces (legs/thighs) is honey chicken. So moist and delicious.
1/4 cup butter, melted 1/4 cup orange juice 1/4 cup honey 1/2 teaspoon salt 1 broiler/fryer chicken (3 to 4 pounds), cut up (I bought the Perdue pack already cut up)
In a shallow bowl, combine the butter, orange juice, honey and salt. Remove 1/3 cup and set aside for basting. Dip chicken pieces in remaining butter mixture; place in a well-greased 13-in. x 9-in. baking dish. (I used a 9x13 Pyrex and didn't grease it).
Bake, uncovered, at 350° for 1 hour or until juices run clear, basting occasionally with reserved butter mixture.
***I basted every 20 minutes, then again when there was 10 mins left, then again when I took it out of the oven.
I basted using the remaining butter, and also the drippings in the pan.
The result was SUPER moist delicious chicken. Just a hint of sweetness. I served with buttered egg noodles.
This was SO easy and tasty!!!

I use them a do a sweet and sour. soy sauce, sugar, white vingar thickened with cornstarch. There isn't really exact measurements because it is to taste, but I brush the mixture over the chicken and bake. You can cook it and refidgerate it and heat it for anothe night. It usually taste better the second time anyway

lemon chicken
i usually make with brown rice and a cucumber/tomato salad with feta, lemon juice, oregano, salt and pepper (scoop out the seeds from both the tomatoes and cucumbers so that they don't repeat on you and dont make the salad watery.
LOVE this meal and cooks in 30 minutes!

Some one posted a recipe for Softito chicken stew that uses chicken thighs and it is outrageously good. Mrsfatthead maybe??

You're welcome, I've tried a bunch of her recipes and have yet to be disappointed. They're always packed with flavor. The asian drumsticks are a favorite in my house. DH LOVES the sauce.
