It really depends on the cost. One of the benefits of owning a home are the tax deductions. You will be paying property taxes that you can't deduct. I would rather wait and buy my own home.

Find out if they are putting you on the deed. If not it's just rent.
If you are ok with that, then do it. I don't see how you will ever buy your own home if you are putting all your money towards an interest only loan for your parent's home. They are not selling you the home so you will get none of the benefits of owning like the tax deducions.
