Pasta Salad recipe?
Was asked to bring a pasta salad for July 4th.
Going to do tortellini, fresh mozarella, artichoke hearts, etc.
What else can I add?
And what type of dressing should I use? Just a bottled italian?
Thanks!!

italian or balsamic vinaigrette? i would add roasted red peppers not only for flavor but for color, even chopped broccoli or spinach would be nice.
i have been making my own simple dressing lately of just olive oil, lemon juice, salt and pepper, so that might be delicious with just a splash of balsamic

Re: Pasta Salad recipe?
Since the tortellini and mozzarella can be a bit heavy, I would try to lighten it up a bit with the dressing- I think you are correct to go with an Italian or even a balsamic. Just make sure it isn't too vinegar-y if you are using bottled. And definitely go with halved cherry or grape tomatoes and maybe black olives or spinach as the OP suggested!

Re: Pasta Salad recipe?
I make a "Buttons and Bow" pasta salad with tortellini and farfalle, grape tomatoes, fresh mozzarella balls, black olives, chopped cucumbers and good seasons Italian dressing.

Re: Pasta Salad recipe?
I make an antipasto tortellini salad.
I cut up one red, one orange, and one yellow red pepper and a container of sliced fresh mushrooms, and cook them in a pan until they soften. About 5 minutes before they're done, I pour some of the Good Seasons salad dressing over it and reduce it just slightly making the balsamic vinegar a little thicker. Once they're done, I put them in a bowl and stick them in the fridge to cool. While it's cooling, I cook the tortellini. Once it's done, I run cold water over it. As the "hot stuff" is cooling, I cut up pepperoni into quarters (mini bite size), I cut grape tomatoes in half, and cube mozzerella cheese. I put everything in a bowl and mix it up with a little more dressing as needed. Stick it in the fridge and let it sit over night. Give it a good stir and add more dressing if needed.
ENJOY!
