Pasta with broccoli
I need to make 2 half trays of pasta with broccoli. I need to warm them up and keep on sternos. Anyone have a recipe for pasta with broccoli garlic and oil? Also Could I make it the night before or will it dry out?

I just cook the pasta in salted water. Then grate A LOT of garlic into EVOO, let it warm on a low heat - don't let it burn. I boil the broc until its still green/firm. Drain pasta and broc, and toss it all together. Top with grated cheese. I think it will be fine reheated, but not microwaved. If it gets dry, just add some add'l EVOO. You can even cook the broc/pasta together.
ETA: if you worried about it drying out, you can cook everything the night before. That morning if you run the pasta under hot water, it will de-clump it and then you can assemble.

Thanks...I was def thinking about making the pasta before and the sauce after but wasn't sure.....thanks for advise on de clumping... should I use fresh or frozen broccoli?

I like fresh better in something like this, stays crisp. Frozen might get too soggy/soft

It's a pretty simple dish... I would not try making it the night before, I don't think it will be as good. You can easily and quickly make the sauce while the water is boiling and the pasta is cooking.

I usually boil fresh broccoli in salted water, once its almost done but still firm, I drain and put aside. Then I boil the pasta with same water I boiled the broccoli in. In a side pan, I will sauteed some minced garlic and onion with olive oil, salt and pepper. Once I have sauteed it enough to infuse the olive oil with the spices, I will add some chicken broth to make more of a juice for the pasta. Then just mix it all together and keep some of the juice aside to add if it gets dried.

This is pretty much what I do. I add a few ladles of the pasta water to it too.

i do this too, but i add red pepper flakes and fresh squeezed lemon also.. yum!

I make this all the time and for every party I have! I make it the morning of and I use frozen broccoli.
So for 1 box of pasta I use 2 bags of broccoli florets. I use about 6-8 cloves of garlic. I know like it seems like a lot but it isn't.
First I boil water throw in the pasta. When the pasta has about 5 minutes left I throw in the broccoli. Drain. In the pot you cooked the pasta in, put in olive oil, probably a half to a full cup. Then add in the minced/pressed garlic. When the garlic starts to puff up add the the pasta. If you wait past the puffing stage the garlic will burn and you need to do it over. Keep stirring the garlic too so it doesn't stick. Then just stir everything together.
I serve this room temp. I notice other people like it like that too. I have started also subbing whole wheat pasta for gluten free since I am trying to slowly convert and my MIL and SIL both can't eat gluten. I usually use 100% corn pasta. Nobody notices and it comes out just as good.

I think 1.5 boxes for each tray is enough pasta and then I would buy at least 8 broccoli crowns for each tray. I know you want to use fresh but cost wise it is cheaper with frozen. The crowns are usually $1.99 a pound maybe $.99 if you catch a sale. That will add up fast. You can by frozen organic if you wanted.
