What can I do with it? I have so much of it... lol
I already did
-pepperoni with cheese and crackers
-pepperoni pizza
-pepperoni with eggs
-pepperoni calzones

If you bake it in the oven or air fry it it turns into crispy pieces of heaven lol

Maybe bake some chicken and then layer it on top with some cheese? I might also add spinach or broccoli rabe.
Throw it in a pasta dish with some veggies?

Oh, my DH makes an amazing pizza dip topped with pepperoni- let me see if I can find the recipe.
It's delicious!
ETA- its this one I think.

A red sauce with diced pepperoni, or puttanesca with pepperoni. Pepperoni and mozzarella quiche. A variety of sandwiches. I love turkey, provolone, pepperoni, lettuce tomato, mustard and sub sauce.

Thank you all. I made an antipast salad, put pepperoni in mac and cheese and made little charcuterie boards for my DD's school lunches! All used up! Saving these ideas for next time though :)
