Quick answer needed on food question
I haven't had my first DR appointment yet so I'm not 100% sure what I can and cannot eat, but I know that you are not really supposed to eat soft cheeses....does this include ricotta if it is cooked? My parents invited DH and I over for baked ziti tonight and I just want to be sure that I can have it. Thanks!

Ricotta is fine, cooked even better.
Cold cuts are also ok heated up.
Soft cheeses are only dangerous if they are made under unsafe conditions, like if the milk is unpasteruized, which is illegal in the US or if you are buying cheese from a dirty place that might have bacteria.

Ricotta is usually pasteurized, so safe to eat.
My dr said if the cheese (even if it's soft) is pasteurized it's fine. The happiest day was when I found out the gorgonzola and goat cheese my work cafe sells are pasteurized.

You're only supposed to avoid unpasteurized cheeses (like the kinds you get at whole foods labeled "raw" milk cheese) or cheeses sliced on deli slicers (for the same reason you're not supposed to eat raw deli meat sliced on those slicers -- they could contain listeria).
Baked ziti is a-ok! Enjoy!

Just avoid unpasteurized cheeses. I have never seen unpasteurized ricotta and I'm assuming it's from the supermarket which means it's likely totally fine.
I'm not sure about unpasteurized cheese being illegal in the US. I know for sure that Whole Foods sells "raw" unpasteurized cheese and there is a certain type of Mexican cheese that is unpasteurized.

Any cheeses made with raw milk must be aged for at least 60 days to kill off any bacteria. Everything else sold in the US is made with pasteurized milk. Other specialty imported cheeses that may carry a risk are only sold to high end restaurants at a high price......I love cheese so I've read up on this
