I usually make mine with a rotisserie chicken from BJ's. I mix together mayo, dijon mustard, red onion, celery (if I have it), dill, salt and pepper.
I use the same combo for my potato salad.

I use whatever cooked chicken I might have and either pull it or cube it. Mix it with LF mayo, celery, salt and pepper and I'm happy.

and if you don't want to use mayo, you can use greek yogurt with a tiny bit or sour cream.. tastes ***almost*** the same

1 cup cooked, cubed chicken
1 cup grapes
1 cup pecans
1/2 cup Miracle Whip
salt/ pepper
so easy and one of my favorite lunches.
I've also done it with apples & walnuts.

i do the same thing except i might add spicy pepper flakes too... i like spicy foods

I use either leftover roasted, rotisserie, chicken cutlets cubed up, etc.
chicken
light mayo
pinch of garlic powder
chopped red onion
black pepper
I have used lefterover BBQ chicken, delish!
Sometime I add cubed apple to it, adds a nice crunch and little sweetnesss!
p.s. i hate celery, or I would probably use it!
