quinoa!!!
i recently discovered quinoa (i know a little late to the party) and i love it!!
tonight i wanted something comforting and simple, wasn't feeling cooking a normal dinner, so i made quinoa and put 2 runny eggs on top and let the yolk run through! OMG soooo good and satisfying!
what are some of your favorite quinoa recipes? any kind of summer salads?

I love quinoa! I usually toss corn, asparagus, broccoli, peas, and cannelloni beans in it with some stir fry sauce. Last week I tried mixing some lentil soup with it and it was delish!

I love quinoa pilaf... I sautee some onions and toast a little orzo then add chicken stock (instead of water) to prepare the quinoa. In the last 15 minutes I add a handful of frozen peas and some slivered toasted almonds. Yummy.
I also like to do tabouleh with quinoa instead of bulgar. Small diced tomatoes, some red onion, a little scallion, mint, parsley, lemon juice, ollive oil, pinch of cilantro, salt and pepper. It is served cool so it's a fantastic summer salad.

I do a curry chicken w/ quinoa. Garlic, onions and chicken sauteed in pan. Add a can of diced tomatoes, chicken stock and quinoa along with curry, chilli and nutmeg. Cook until all liquid is evaporated.

I used it like cous cous once with a chicken dish - it got lost but it didn't matter.
I also throw some into my chili - again, gets lost but it adds protien and its cheap!
BTW - its Kosher for Passover in case anyone is interested

I made a chicken stew recently and instead of putting in white rice, I used quinoa. Very yummy!

I also make a quinoa tabboulleh, it's one of my favorites for lunch. I mix diced roma tomatoes, cucumbers and scallions with curly parsley and lots of lemon juice. I season with sea salt and make a lettuce wrap out of it, add it to salads, or eat it with pita chips. Sometimes (like right now, lol) I toast flatbread brushed with olive oil in the oven and serve it over that. Delish!

We love quinoa too!
I make a yummy summer salad with Quinoa, avocado, black beans, corn, red onions. I've used ren quinoa for this salad most of the time and it's yummy! For dressing, I just do olive oil, apple cider vinegar, salt, pepper, garlic & lemon juice.
