really easy and yummy dinner!
i got this from rachael ray's magazine, and we made it last night.. its really good, and easy too- especially if you have a garden where you grow a lot of herbs ( like us!) theres no link because they don't post recipes from current issues but, basically
grape tomatoes fresh herbs- whatever you have/want to use garlic 5-6 sea scallops per person 1 tb butter
cut the grape tomatoes in half and put them in bowl
chop of 1-2 cloves of fresh garlic and put with tomatoes
chop up a bunch of fresh herbs ( whatever you want- we used all stuff we have growing in our garden: sage, rosemary,basil, oregano,mint, lemon balm, cilantro, thyme)
let this sit for about an hour to marinate/develop the flavors
put scallops on skewers and grill for about 4 minutes per side
put scallops in the bowl with the tomatoes/herbs, and add the butter
stir until butter is melted and serve
it came out sooo good with all the flavor from the herbs- a great, light summer meal! the scallops are expensive, but we realized you could probably use some of the frozen shrimp in a bag that goes on sale a lot.

that does sound yumy! and scallops are a nice treat!!!
I tried something similar with salmon a few weeks ago, so I think it would go great with any seafood!!

haha yeah.. a nice $15 for 10 scallops treat! thats why we're gonna try it with a cheaper seafood next time ( if there is such a thing! LOL . but it definitely was good!

I just ripped this out of the mag. last night! I can't wait to try!

That sounds like it would be great with a cold pesto pasta salad on the side.
I'm going to have to try this & the basil in my yard is ready to start picking!
