Risotto question
All the recipes I have read say to let the onions sweat and not get brown. Well I have no patience and my onions always brown.
How do you make your risotto? Do you care if the onions brown?

I've only made it twice and i followed ina's recipe verrrry carefully bc i was so nervous about it haha

I make rissoto a lot but it onions don't seem to brown (Hope I am not doing something wrong). I put butter (vegan) in a pan with shallots, onions and the veggie I am using and let that soften then I add rice, wine and broth. Once thats all good I add nutritional yeast and sage. It takes me about 45 minutes.

I make risotto quite often and it doesn't take long at all to sweat the onions - usually about 3-4 minutes. I just make sure to stir them a lot so they don't sit. sometimes they'll brown and I don't worry about it, as long as they don't burn.

Browning takes longer than sweating. Risotto is all about patience though. It takes sooo long. I have never had browned onions in risotto so I don't know if I would mind it?

Maybe my heat is up too high? The onions brown before they become translucent.

keep the onions on medium heat, and use a heavy pan. are you cutting the onions too thin?

A sweat just releases the water. I put the pan on low to medium/low and move the onions around. Also - don't make them toooo small or too large. A nice brunoise is perfect. If they are too big they take a long time to sweat and if they are too small they may cook unevenly in the pan.
