Roasted potato recipe
Does anyone have an easy and delicious roasted potato recipe? My mom has decided she wants to serve this with Christmas dinner and doesn't have a recipe!

It's not really a recipe, but I buy the baby yukon golds and reds and cut them in half or quarters. Then I put some olive oil, rosemary, salt, pepper, and fresh minced garlic in a mixing bowl and toss the potatoes in it. Then put in the oven on a baking sheet at 450 degrees for 20 minutes or until the potatoes are nice and brown. You want to shake them a few times. You can do at a lower temp for longer if you are using the oven at a different temperature for other things.

i kinda do the same thing but instead Ijust use mccormic italin seasoning blend

Something we started doing that makes a difference is boil the potatoes for a while, then roasting them.

I do a traditional roast potato, peel my spuds, soak them in water for 20 minutes to get rid of some of the starch, par boil them for maybe 5-6 minutes, drain them, fluff them up, throw some flour or polenta on them, and put them in VERY HOT fat (thats the secret, I either use Goose Fat, Beef Drippings or Vegetable oil) and roast them in a hot oven for 40 minutes or so. Heaven.

The trick I do is to put the baking sheet in the oven while it is preheating - get the sheet nice and hot.
When you pour the potatoes on, it will sizzle and create a nice crust on the outside. The inside will be soft and yummy.
These are best served right away, the leftovers loose some of the crunchy outside.
