Roasting a chicken and vegetables
I am roasting a chicken for dinner tonight, but want to roast the root veggies with it. Most of the websites I'm looking at are saying to put the veggies under the rack so that the chicken juices drip down on them. Wouldn't this make the vegetables really greasy, though? Can anyone advise me how to do this?

I always thought when they say to lay the chicken on the veggies that was only for flavour and to keep the chicken elevated from the fat. I didn't think you could eat them. Has anyone ever done this?
I would set my chicken on a rack so that it isn't sitting in fat and then I would add potatoes tossed in some oil, rosemary, and salt and pepper about 15 minutes after adding the chicken to the oven. I would put them off to the side away from the chicken.

I have always roasted my chicken in a large glass casserole dish put the chicken in the middle, cut up onions, potatoes and whatever else and place them around the chicken so the chicken is surrounded by veggies then i cook at 450 for an hour and half and is comes out perfect and juicy, the veggies are little greasy but i remove them to a paper toweled plate to remove the grease and then serve, it's one of DH's favorite meals.

I am going to try this tonight... just to check, you put the chicken right in the pyrex dish? Not on a rack or anything?

Yes, i always have. Im actually making a roaster tonight LOL!
