Rotisserie chicken leftovers?
We bought a whole cooked chicken and never ate it. Besides soup and chicken salad what should I do with it? Always looking for new ideas, I do this a lot lol!

I make a casserole with the leftovers where you mix shredded chicken with some cheese, cooked mushrooms and onions and a little cream of mushroom soup. Scoop spoonfuls into crescent rolls and pinch the corners so it's kinda closed. Top with the rest of soup and a little more cheese and bake it in the oven until the crescents are cooked. It's so yummy.

I've done chicken enchiladas, quesadillas, and wraps with diced chicken, mexican cheese and sauteed onions and peppers.

Chicken Chili is great because you can make a big batch and freeze any leftovers that you won't eat right away.
Other than that, I do BBQ or Buffalo chicken pizza, empenadas, wraps, chicken pot pies.
