Some more easy, yummy recipes.

Homemade Cheeseburger Pasta

1 box mini wagon wheel pasta
1 can Campbells cheddar cheese soup
1 green bell pepper, diced
1 small onion, diced
2 cloves garlic, chopped
1/2-1lb ground turkey
1 packet taco low sodium taco seasoning
Milk or water

Boil pasta and cook till almost al dente, then set aside.

In a skillet, sautee the pepper and onion till soft, then add garlic. Add turkey meat and brown.

In a large bowl, combine the cheese soup w/the taco seasoning, and thin it out w/either milk or water (I like a combo of both). I use probably about 1/2 cup total of liquid.

Add liquid to meat mixture and let simmer. When it reaches a boil, reduce the heat and add the pasta. Let simmer 5-7 minutes till pasta is al dente and voila!

BBQ Chicken Rollups

4 thin sliced chicken cutlets
4 slices cheddar cheese
4 slices pepper jack cheese
8 slices bacon, cooked and drained of extra fat (I like to cook them flat in my toaster oven or broiler)
BBQ sauce
Poultry seasoning

Layer each chicken cutlet w/one slice of each cheddar and jack cheese and 2 slices of bacon. Roll up and ends with toothpicks. Sprinkle some poultry seasoning on the rollups and place in a glass baking dish that is sprayed with Pam. Baste w/BBQ sauce. Bake at 350 for about 15 minutes, or until chicken is cooked. Continue basting w/BBQ sauce throughout cooking if it starts to look dry.

Italian Baked Mac and Cheese

1 jar Classico Alfredo sauce
1 lb rigatoni, cooked and drained
1/2 cup shredded mozzarella
1/2 cup breadcrumbs mixed w/2 tbsp melted butter
Parmesan cheese

Combine rigatoni w/alfredo sauce and mozzarella. Pour into a baking dish and top w/breadcrumb mixture. Sprinkle w/parm cheese. Bake at 375 for about 25 minutes, or until gold and bubbly.

I also like to add chicken, broccoli, etc. to this recipe.

Honey Roasted Pork Loin

1 pork loin, trimmed
3/4 cup honey
1/2 yellow mustard
1 tsp ground ginger
3-4 Granny Smith Apples, quarted w/skin on
1 onion, sliced into rings
1 tbsp sugar
1 tsp cinnamon
1 tsp brown sugar
1/4 cup water

Combine apples w/water, cinnamon, brown sugar and white sugar. Layer in the bottom of crockpot. Lay onion rings on top. Combine honey, mustard and ginger in separate bowl. Lay pork loin on top of apples/onions and pour honey mixture on top. Set on Low for 6-8 hours.

Saugage and Caramelized Onion Panini

8 focaccia rolls or other crisp Italian bread
4 sweet Italian sausage links
4 hot Italian sausage links
4 large onions, slices
1/4 Olive Oil
2 tbsp butter
8 slices provolone cheese

In a large skillet, sweat onions in butter and olive oil until caramelized, or until tender and translucent (your preference).

Butterfly each sausage link and cook in a separate skillet.

Lay one of each link on bread, top w/a scoop of onions, and 2 slices of cheese. Top w/bread and brush with olive oil.

Cook on a panini press, or in a skillet w/a weighted skillet on top.

making hte BBQ chicken roll-ups tonight!

I usually make something similar with feta and tomatoes in the middle, but this sounded yummier. And I always crave bacon and melted cheese Chat Icon
