I don't! But, I notice that a lot of teachers at school leave out the God part..so, I started to..don't want to offend anyone I guess..

I don't say anything. I actually get a little annoyed when people say it to me. Not offended, but I sneeze kinda loudly, so I'm slightly embarassed in the first place, then to have everyone around me acknowledge the fact makes it worse.
I say it to my son, because if he sneezes and I don't he says "Daddy, say 'Bless You'"... :) How can I say no to that... :)

i always just say "Bless"
a) i dont know if they believe in god... i barely do for that matter
b) i'm NOT god so i can't bless them! (a la dane cook)

Gesundheit does mean "good health" Most other languages uses some form of "good health" after a sneeze. It makes so much more sense!
It reminds me of the Seinfeld. "you are SO good looking"
