we make this one from America's test Kitchen. We LOVE it. I never ate stuffing before we made this b/c I always hated the texture but this is the perfect balance. We ten to leave out the nuts. And we made it with dried cranberries instead of cherries b/c we had them

Stuffing Muffins - makes 8- 10
1 package of hamburger potato rolls 1 small onion - chopped 1 stick of butter 2 eggs splash of milk salt & pepper
Preheat oven to 350. Grate the rolls on the large holes of a cheese grater or run through food processor. Sautee onion in butter until soft. Beat eggs with a splash of milk. I add the salt & pepper to the eggs. Add eggs & onions to the bread. Stir. Using an ice cream scoop, scoop a large helping of the mixture into the muffin tin. My tin is non-stick so I didn't need to grease or use Pam. Cook for 30 - 35 minutes. I double the recipe for Thanksgiving.
Make sure you watch them at the end. They go from done to burnt very quick.
I like my stuffing plain but I'm sure you can add fruit, nuts etc...
eta: if the mixture seems too dry add some chicken broth.

stuffing recipes
I start with Stove Top, 1 box of cornbread and 1 box of turkey, and add browned sausage, mushrooms, onions and celery. Bake it in greased pyrex pan so the bottom gets a little crispy.

I love my inlaws.
1 lb ground beef 1 loaf bread (ripped into very small pieces) 1 1/2 sticks butter 6-7 stalks celery lots of thyme
rip bread into small pieces, place in large bowl cook beef, drain. set aside add butter, celery and thyme. cook till celery is softened. add beef to bread. add celery butter over bread. bake in turkey or separate pan
