Re: Thanksgiving menu

Thanksgiving is my FAVORITE holiday- especially for the food! We always have at least 15 people for dinner, sometimes up to 30.

We usually start with appetizers:
-Cheese Platter
-Assorted Bread and Cracker Platter
-Fruit Platter
-Cranberry Baked Brie
-Chestnut Stuffed Mushrooms
-Deviled Eggs
-Vegetable Platter with Dip

For the main meal and side dishes we have:
-Butternut Squash Soup
-Turkey
-Fresh Whole Cranberry Sauce
-Canned Jellied Cranberry Sauce
-Gravy
-Applesauce
-Sweet Potato Casserole with Marshmallows
-Turkey Sausage and Chestnut Stuffing
-Mashed Yams and Apples
-Sweet Potato Pie with Meringue
-Garlic Mashed Potatoes
-String Bean Casserole
-Fresh String Beans sauteed in garlic and oil
-Candied Carrots
-Pickles (Sour and Half-Sour)

These are our usual desserts but people always bring more:
-Pumpkin Pie
-Apple Pie w/Vanilla Ice Cream
-Pumpkin Chocolate Chip Cookies
-Chocolate Pudding Pie with Whipped Cream

I'm thinking of switching it up a bit this year and making some new things, but no one ever wants to let go of their favorites.

I have no idea if this is the recipe headoverheels uses, but shake bake and party just recently had this posted:

Kahlua Pumpkin Cheesecake Martini

Ingredients

2 parts Pinnacle Pumpkin Pie vodka
1 part Kahlua
1 1/2 parts half & half
2 teaspoons cheesecake pudding mix
ice

Directions

In a cocktail shaker combine vodka, Kahlua and cheesecake pudding mix. Stir until the mix is dissolved. Then add half & half and ice. Shake, pour, and float away on a creamy, dreamy cocktail cloud.

I don't plan on using her brownie mix recipe, I'm going to used a boxed mix for that, since I have a ghirardelli one I love.

Re: Thanksgiving menu

Well no Thanksgiving here Chat Icon and whole turkeys aren't easy to find Chat Icon .

But they at least have turkey schnitzel cut here Chat Icon , so I plan on making skinny taste's turkey sweet potato shepherd's pie on that Thursday. Probably baked apples as a dessert. Maybe I'll make a stuffing side, too.

I have off that Wednesday, so maybe I'll be able to find a small turkey for Thanksgiving.

Chipolte Sweet Potato Casserole

Sure, it's Claire Robinson and it's really yummy. It's only 5 ingredients too!

It's officially called Smokey Sweet Potato Souffle.

Ingredients
• 5 pounds sweet potatoes, pricked with a knife
• 1 pound sliced bacon
• 1 chipotle in adobo, chopped, plus 2 teaspoons adobo sauce
• 1/4 cup Grade B maple syrup
• 5 eggs, separated
• Kosher salt and freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.
Roast the potatoes on sheet tray until fully cooked, about 1 hour. Set aside until cool enough to handle.

Meanwhile cook the bacon in large skillet over medium-high heat until crisp.
Remove and drain on paper towels, reserving the rendered bacon fat. Chop bacon and set aside, reserving 1/4 cup for garnish.

Peel the sweet potatoes and mash. Add the potatoes to a large bowl. Stir in the chopped chipotle, adobe sauce, maple syrup, chopped bacon and egg yolks.

Mix together until combined. Season, to
taste, with salt and pepper.

In a separate large bowl, whip the egg whites until stiff peaks form. Add 1/3 of whipped egg whites to sweet potato mixture and fold to create a lighter base.
Fold in remaining whites until just incorporated, leaving some white streaks.

Grease a 2 quart baking dish with some of the reserved bacon fat and gently pour in sweet potato souffle mixture. Sprinkle with the remaining chopped bacon. Put the baking dish on a sheet tray and bake 40 minutes. Enjoy!
