since you guys were so helpful yesterday, i wanted to update you of my use so far.

last night i got home late and didnt have any patience to stand over a stove making the vodka sauce...but it does sound delish, so i think i may make that tonight

instead i set my crockpot to work with a mixed veggie soup

-pack of frozen spinach
-chopped green onions
-can of white beans
-can of sweet corn kernels
- 1/4 cup blue cheese crumbles
-veggie broth
-chopped up mushrooms
-can of diced tomato
+ lemon pepper to taste

after that cooked on high for 4 hours, i let it cool a bit....used my immersion blender to puree it a bit, added 2 cups of half and half and used the blender some more

mmmm, delish!! and healthy!!! (the half and half i have is the fat free kind)

im having a small bowl for lunch...and for dinner im going to cook up some jasmine rice and throw it in. cant wait!
