Vegan wedding girl back
Sorry guys, I have another account and I tried to update the thereunderthree email and for some reason I am not able to log back on under that account. I have emailed administration numerous times but no one is getting back to me.
I am not annoyed that it is a vegan wedding at all. I totally respect their choices, I am surprised since at my house the groom did eat some of the food I had. This is my way younger cousin who is not very nice to the rest of the family. The wedding is also the day before mothers day and my husband can't attend since I have three kids a 5, 3 1/2 and a 2 1/2 year old that have only stayed with my parents overnight and they will be at the wedding. The wedding is in Conn a little far but I will be attending Ill stop and eat somewhere before going. Anyway here are my choices for those that have asked.
Poblano BBQ Grilled Portobello
Grilled Vegetable Lasagna
Quinoa & Spring Vegetable Stuffed Peppers
Sesame Seared Tofu I will probably order the Grilled Vegetable Lasagna

The only thing I would eat on that list is the vege lasagna but if it's vegan that means no cheese or some fake cheese so right there you are losing me....

LOL I didn't think about that. I am sure I will be stopping by McDonalds or checking to see if there is a chick filet near by. Again I totally respect them and their choices. I just feel if there are more people at the wedding that you are having that do not eat the way you eat then you should have something for them.

We all wanted to know the choices LOL
The quinoa and spring vegetable stuffed peppers sound really good. So does the poblano portabello, but I'm not sure what sides it would be served with.
If you know you like quinoa, I'd do the stuffed pepper.
The lasagna sounds good but it'll probably have a plant-based cheese and not everyone is open to that. If you are, awesome!
Have a snack before you go, but keep yourself open to trying something new. You never know - you may love your dish, and I'm sure there will be some good things to pick on at the cocktail hour!

I personally think it all sounds good, but I'm a very diverse eater! I say go there, try some new things and embrace it. You never know, you might find something new and interesting!

I was going to say I like the veggie lasagna and sounds good to me but not everyone is a veggie person and the first one too but I do like to try new things.

I like to try new things, so I'd go with the lasagna or the peppers; but DH wouldn't touch any of those dishes.

I'd probably go with the stuffed peppers.
Having had vegan lasagna at the wedding I went to, I would not go that route.

Since I don't really eat many veggies, I wouldn't be thrilled about this menu. Also, an issue I have with it is that none of it really sounds "filling" but I guess if there are any appetizers or desserts it would be fine. I wouldn't really care, it's only one night for a few hours.

Something to keep in mind if the wedding is in CT- they may not do cocktail hour like we do. Like you may get carrot sticks. I went to a wedding in CT when I was pregnant and puking and got vegetarian paella- it was like the rice you microwave in the pouch). Cocktail hour was cheese and crackers, some dips and maybe pigs in blankets.....so you'd be left with blankets!

Good to know!! I'm hoping that it will be an early night and we don't have to spend the night. It is a 4pm wedding and honestly I don't have the money to spend on a hotel room for just myself.
