Vegetarian Chili

Anyone have a really tasty recipe where DH won't miss the meat?

I make this A LOT. And my kids and Rob love it.

Chop up 2 onions, a lot of garlic, 3 carrots, 1 jalapeno (ribs & seeds removed) and 1 stalk celery. Heat up some olive oil and throw in the veg. When the veg is wilted, add Boca Meatless Crumble and break it up and heat it through. Add Chili, Cumin and Paprika in a ratio of 3:1:1 to your taste. Add 1 large can of whole plum tomatoes (drained with juice reserved just in case) and a medium can of tomato puree. Add 1 can of drained black beans and 1 can of drained kidney beans. Do not rinse the beans in water, just drain them and pour them in. You may even want to pour in a little of the liquid. You can also add some frozen corn if you'd like. Add salt & cayenne to taste. Let is simmer 20 minutes or so, stirring occassionally. If it's too thin for you, you can thicken with a little mesa flour paste (2 Tablespoons of Mesa powder stirred into 1/3 cup of water until smooth.. add a little of the mix at a time stirring for about 5 minutes between next bit until it's the consistency you like. I don't like it too thick because I serve over rice. If it's too thin you can add some of the reserved juice from the canned whole tomatoes. Correct seasonings after it simmers and it's ready.

I serve it over brown rice with sour cream, shredded cheese and a little sprig of cilantro.

I just made a eggplant chili that was SO good and even DH loved it!

1 eggplant, cut into 1-inch cubes
2 Tbsp Olive oil
2 yellow onions, chopped
3 cloves garlic, minced
2 large red bell peppers, cored, seeded, diced
1 28-ounce can stewed or diced tomatoes with the juice
1 Tbsp ground cumin
1-2 Tbsp chili powder
2 Tbsp chopped fresh chopped oregano or 2 teaspoons dried
2 15-ounce cans of red kidney beans, drained
Salt and freshly ground black pepper to taste
Feta cheese crumbles to garnish ( i used reduced fat and it worked well)


Directions

1 Warm oil in a big pot with garlic and onions, and then add diced eggplant and red peppers. Sautee for about 10 minutes.
2 Add the remaining ingredients and let simmer for about 35 minutes or until eggplant is tender.
3 Add salt and freshly ground pepper to taste. Garnish each bowl with crumbled feta and serve alone or over rice
