Vegetarian dinners?
One of my friends was put on bed rest so we started a meal train for her. I need some vegetarian dinner ideas that don't involve any pasta ( she said she is sick of pasta).

-vegetable fajitas
-spanish rice and beans with guacamole
-salads (all different kinds)
-grilled veggie kabobs with hummus
-soups (broccoli cheddar, vegetable soup, butternut squash, etc.)
-frittata or quiche
-cheese and cracker platter with dried or fresh fruit

Quinoa and sautéed mixed veggies- I usually do green and yellow zucchini, broccoli and portabella mushrooms.

Vegetarian dinners?
Stuffed eggplant, eggplant parmigiana, stuffed acorn squash, Bobby Flay's recipe for chile rellenos is amazing. I also make stuffed zucchini... So good.
Someone on here has an amazing recipe for a caprese quinoa bake.
