Very Early Thanksgiving Question
I'm hostng for first time this year for 30 people so I'm trying to be organized. Just thnking of ideas - and need a first course. DH's family is Italian - last year his mom suggested Chicken soup or manicotti. I would love to do butternut squash soup but don't thnk that will fly. What about...
- autumn risotto - something with squash or mushrooms? - Minestrone soup? - Vegetable Bolognese
I hate to do the pastas b/c I feel like its so heavy and we already also have antipasti but can't thnk of things.
Any other ideas?
Anyone ever done like a stuffed mini pumpkin with beef, rice and pumpkin? Could that be good or even done?

I'm Italian and my family always does some sort of pasta dish first like lasagna, baked ziti, ravioli, manicotti etc...its almost like they cant eat the turkey without having their pasta first,but I know what your saying so what about Italian Wedding Soup, I've heard of other people having that first. I've never heard of a stuffed pumpkin with beef, but I know you can serve soup in them.

I say go with the butternut squash soup or even better mix that with the pasta idea.... my favorite is butternut squash ravioli!!
also if you choose to do some sort of soup, yes you can scoop out the insides of mini pumpkins and serve the soup in them.

My mother finally did away with the pasta course years ago because no one would eat the turkey after. Instead she would make Tortellini in brodo (i.e. tortellini in chicken broth) as a first course.

If you are just doing the first course, the risotto or soup sounds wonderful. I'm loving the idea of pumpkins stuffed with meat & might try that, but with a squash?
What about a salad? I make a delicious "fall" salad with a maple vinaigrette, apples or pears, homemade spiced pecans & gorgonzola.

Agreed - and beef in a pumpkin? Just doesn't sound very appetizing to me. I'd go with Minnestrone soup- delicious. Or if you want something lighter- someone earlier had suggested the Tortellini in Broth.

Random, but can you give me her recipe? I love this soup but can't replicate and it seems so easy!
