Very Simple Recipes
long story short... my uncle is dieing of liver cancer...my aunt was NEVER the cook in the family (he was the chef), so during our recent visit, i cooked for her (fridge stuff, things she can reheat easily)...
i am 'good' at very few meals, and those are the ones i made for her...but i got to thinking that i'd like to put together a book of sorts of EASY recipes for her to be able to do for herself... just to maybe help her out...in some way (they are in Cali).
if you have any to share, can you post them here or FM me them?

Pre Heat oven to 350
Throw thick chicken cutlets in a cassarole dish and bake for about 30-35 minutes.
Take out of the oven and top the chicken breasts with 1/2 can of black beans, jar of salsa, and shredded cheddar cheese and put back in the oven for 10 minutes.
I will usually cook some rice to go with it. I will also put a dollop of sour cream on my plate to go with it.
YUM!!

Sorry about your uncle.
Two words: CROCK POT!!!
I posted a recipe the other day for chicken & bacon corn chowder - its really good and freezes well.
If she's not a cook, you might want to look into things that freeze well too - maybe a separate section in your book.
That's a really sweet idea.
Another easy one I've made:
Cook whole wheat penne while that's going, brown 1 pound bulk sausage meat (or sausage burgers or take the casing off the links) when its about 90% done, add 1 can petite diced tomatoes. Maybe about 1/2 cup water (enough to make sauce) when that's warm, top w/ 1 bag )6-9 ounce FRESH baby spinach. Wilt spinach (put the cover on and it was steam down to almost nothing) Mix sausage/pasta together - serve w/ garlic bread.
ETA: you might want to consider things that you can "morph" into something else ~ (Robin Miller)
Once I made a big pot of speg & meat sauce. When I was browning the meat I thought I'd get 2 dinners out of it. DH ate so much there wasn't a lot left. I added some kidney beans, chilis, spices and made it into a quick chili.

so sorry to hear about your uncle
your thought is a great and thoughtful idea
i'm not good in the kitchen, i'm still learning
this is one i can't mess up, so it must be easy
any cuts of chicken, i like the thigh season with salt and pepper in a screaming hot pan with oil, i use olive oil, put in the chicken, just to brown on each side.
lower the heat to low and add any sauce you like. i use spanish mojito (goya brand), or bbq sauce, or mustard.
cover and leave alone for about 30-40 minutes for the inside of the chicken to cook through.
serve with any vegetable or starch.
i've yet to mess this up. i love to put the lid on and say, "tah, dah!" because it's so easy

Turkey Sausage & Bowties
Ingredients: 1 lb of Spicy Turkey Sausage (Stoneyfield) 1 16oz Package of Fresh Spinach 1 Box of Bowties (Farfalle) 1 Jar of Julienne Sun-dried Tomatoes in Oil A little Extra Virgin Olive Oil S & P to Taste Grated Parm if desired
Cook pasta according to directions, drain and put aside.
In large skillet heat up enough EVOO to coat pan, once warm add turkey sausages (whole). Once all sides of turkey sausages are brown, remove and slice, return to pan.
Once sausages appear to be cooked through, add fresh spinach to pan, constantly stir around and cook until spinach has shrunk down.
Add pasta to skillet (Low heat) and pour in Sun-dried tomatoes with oil. Mix thoroughly.
Add Salt & Pepper as Desired, grated parm before serving!
Once you get started this is a very easy recipe!!

been there too.. chili (as per me lol) one pack of ground turkey or meat two can of each: kidney beans black beans two cans of whole peeled tomatos packet of chili mix plus chili powder (as to taste)
two cloves of garlic that you just crush with the knife
salt and pepper onion and pepper (some people like more, some less) and a tiny tiny can of chili pepper (haas) stir and wait...I crock pot it so it depends on if she has one...
oh and cilantro if u like!!!
