Weekly menu 10/19
share yours! mine is still a work in progress! i have monday as of now.. will update as i know more!
Monday Roast beef- in the slow cooker with carrots.potatoes, celery
Tuesday- Moroccan Chicken with lemon and olives
Wednesday- spaghetti ali oili ( garlic and oil) and parm cheese
Thursday- either leftovers or burgers and homemade fries
Friday- Almond Crusted Salmon with lemon leek sauce
saturday- going to a bday party sunday- going to another bday party
woohoo! i got my menu in place for next week! yippee!

Saturday: Meat Sauce and Pasta
Sundays: Baked Chicken Breasts/Drumsticks, Brown Rice, Corn on the Cob
Mondays: Pork Chops, Couscous and peas
Tuesdays: Minute Steak, Potatoes, Green beans
Wednesday: Leftover sauce and pasta
Thursday: Takeout night
Friday: Chili (frozen left overs supplement other nights or replace take out) I make mine when I get home, but it is a great slow cooker meal as well.
I need some new recipes!

Sunday - Glazed Corned beef, Mashed Potatos & creamed corn
Monday - BBQ beef sandwiches, & sweet potato fries (DH's night to cook!)
Tuesday - Chicken & spinach tortilla bake (from Rachel Ray mag this month) & tossed salad w/ tomatos, cucumbers and peppers.
Wednesday - Lemon Chicken w/basmati rice, & sauteed green beans
Thursday - London broil, roasted red potatos, & a ceasar salad
Friday - Take out
Sat - Hosting an October feast type of dinner. Menu still undecided!

You guys are GOOD! I've been so late with actually figuring out my menus. Total slacker.
Sunday: Book club meeting - Brunch for Dinner: French Toast Casserole, Crab Quiche, Fruit Salad, Mimosas.
Monday: Spaghetti & Meatballs, Green Salad, Garlic Bread
Tuesday: Crockpot Pot Roast with root veggies, Buttered noodles, String bean Salad.
Wednesday: Chicken Scampi, Vermicelli noodles, Caesar Salad
Thursday: Pizza or Take Away
Friday: New England Clam Chowder, Baguette, Salad
Saturday: Paella

sounds delish! Can i ask you how you make the roast beef in the slow cooker without it drying out? Do u add beef broth? TIA

Monday- Turkey meatloaf, mashed potatoes, salad and corn Tues leftover macaroni and meatballs wed- oven stuffer with rosemary and thyme and lemon YUM! Roasted potatoes, salad and broccoli with garlic and olive oil , lemon wed-beef stew with carrots potatoes, mushrooms served over hot buttered noodles thurs-hamburgers and ff's ( soccer night- it has to be something quick! fri - pizza Sat- roast pork with saurkraut and brown sugar- baked sweet potatoes- salad Sunday- chicken soup (home made )

Monday - DH will have leftovers from takeout on Saturday, I have a yoga class so I will probably have just a salad.
Tuesday - kielbasa, perogies, string beans, salad
Wednesday - chicken stir fry and rice
Thursday - sweet & sour pork, rice and a salad
Friday - takeout..

Sunday - 2 soups: Potato and Ham and Broccoli Cheese. I make 2 because DH and I bring them for lunch and DC's have them after school. Crescent rolls
Monday - "Wendy's" chili and cornbread
Tuesday - grilled chicken breast, mac n cheese, broc cauliflower blend
Wednesday - pork chops, pierogies, green beans
Thursday - beef stroganoff, noodles, green salad
Friday - pizza
Sat - clean out the fridge and eat leftovers.

Can I just say...you guys are awesome!!!
I'm not a great cook, so seeing how you plan out your week's menu is just mind-bogling to me.
We don't walk in the door at night until 630p, but I want to become more regimented when it comes to dinner.
What time do you usually get dinner on the table?

Monday: London Broil w/ roasted fingerling potatoes, mushrooms and sugar snap peas
Tuesday: Italian Wedding Soup and Salad
Wednesday: Pork Chops with dried fruit sauce, pierogies and brussel sprouts.
Thursday: Homemade french bread "pizzas" and Ceasar Salad.
Friday: Asian noodles w/chicken and vegetables.

Sunday- Homemade Lasagna, Italian bread Monday- Boneless center cut pork chops, breaded in corn flake crumbs and pour duck sauce on top, wild rice, steamed veggies Tuesday- Rotissiere chicken, salad, stuffing. Thursday- Sweet and sour meatballs over rice Friday- Chicken cordon Blue, veggie, and wild rice. Saturday- take out night or go out to dinner.

We don't eat until around 7pm. I work until 6 but usually leave 20 minutes to 6 to pick up my kids from After Care. Then we settle them in, get homework started, get dinner started, help with homework, clear up homwork, set the table and serve.

Sat: Shrimp Oreganata with whole wheat orzo and salad
Sunday: Taco night with all the fixins and homemade guacamole and pico de gallo
Monday: leftovers (normally we'd skip a night but I don't see all the fresh tomato, guac etc lasting beyond tonight)
Tues: butternut squash soup, rib-eye steak on the bbq, fresh oven roasted sweet potato and asparagus
Wed: grabbing something out after meet the teacher night/book fair at DS school

Here you go
For the chicken:
2 lbs boneless, skinless chicken thighs (you could also do bone-in - it will taste better) 1.5 lbs boneless, skinless chicken breasts 1 minced garlic clove 1 lime’s juice 2 tsp salt
Place a cup of water and the remaining ingredients except for the chicken in a double-bagged gallon size zip top bag. Add the rinsed chicken (always rinse meats before using) to bag, toss it up a bit with a spoon and seal, pressing out as much air as possible. Marinate / brine for no longer than 3 or 4 hours but at least 2, turning and rearranging a couple of times.
If you do not have time to marinate - no biggie it will still taste good. 20 minutes is fine.
The rest:
1 large chopped green/red/yellow/orange sweet pepper 1 large chopped yellow onion 6 cloves garlic 1 tsp oregano 1 fat pinch of saffron (or you could use a packet of Sazon Goya w/ achiote and culantro) 2 medium size bay leaves 1/2 cup Virgin olive oil 1 small can tomato sauce (like Hunt's) 2 1/2 cups Valencia or Arborio or some sort of risotto rice 3 1/2 cups chicken broth 1 bottle beer Peas - optional and to your liking
After the chicken has soaked long enough, take it out and dry it on and off with some paper towels. To your dutch oven that has been gathering momentum for the past 5 minutes over medium high heat, add 1/4c of the oil. place as many chicken parts in there you can without crowding. You are trying to give the chicken some nice brown crust, so as much of it should be in contact with the pan. Brown on the other side and place browned chicken in a dish covered with foil (loosely). Repeat with remaining chicken.
Add the other 1/4c of oil and when ready, add the chopped onion and pepper, reducing the heat to medium now. Cook for 6-8 minutes, stirring occasionally, scraping up the browned chicken bits off the pan.
Add the minced garlic and cook for another 4-5 minutes until all these veggies are nice and soft and . Add the oregano, the bay leaves and the saffron (or Sazon) and stir some more, until the saffron fragrance tapers (1-2 min). Now add the tomato sauce cook this down for a few minutes so as to be more pasty than watery.
Throw in the chicken and it’s juices collected in the plate, making sure to toss all this together to coat the chicken in the sofri. This goes on for another 3-4 minutes. Now, add the rice and toss that with the chicken for a few minutes. Add a generous helping of salt. Finally, add the 3.5 cups of broth, mix and bring to a boil. Stir, cover and reduce heat to as low as possible on your range. Let that cook for 20-30 minutes but do NOT uncover or peek!
Your rice is cooked now and there is still some liquid in the pot amongst the rice. Check the seasoning and add more salt if needed. Pour the beer in cover and let sit for 10 minutes (with the heat turned off).
At the end top with peas and stir in - serve and enjoy.
