What can I do with chop meat - Other than Hamburgers, Meatloaf and Meatballs???
I defrosted chop meat and I want to do something different with it.
Any ideas?

stuffed eggplant (Bake halved eggplant brushed with oil at 400 degrees until tender.... scoop out most of the eggplant, and mix with browned meat and whatever veg you have... this week we're mixing it with diced cooked zucchini, tomatoes, roasted pignolis, fennugreek, turmeric, cayenne, and salt.)

I'm on South Beach, and I found this recipe - I made it and it was fantastic!
If you wanted, you could use a pie crust on the bottom (and of course use your ground beef where it calls for ground turkey...)
Bacon Cheeseburger Quiche - Phase 1
1 lb. very ground turkey 1 small chopped onion 4 slices crisp-cooked bacon, chopped in bits 3 eggs 1/2 cup light mayonnaise 1/2 cup fat free half-n-half 8 oz. low-fat shredded Cheddar or Swiss cheese garlic powder to taste (optional) pepper
Brown ground turkey in skillet with onion. Remove and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.
Preheat oven to 350°F. Combine remaining ingredients in mixer bowl and whip well. Pour mixture over turkey "crust" and bake 40-45 minutes until top is browned and "set". Cool 15-20 minutes before slicing.

My mother used to make beef & noodles.
Cook wide egg noodles per instructions on the bag.
Brown ground beef in large fry pan, drain the excess grease. Add a can of beef gravy, a can of tomato sauce (smallish ones - 10oz or so), salt, pepper and oregano (just a pinch). Mix and let simmer to heat up sauce. Add the noodles. Stir & serve.

I was looking thrugh old BH&G magazines to cut out recipes to add to my binder, and there was a recipe for shephard's pie in peppers....like a shephard's stuffed pepper.
That looked SOOOOOOOOOO good to me and I think I will be making it soon. Perfect comfy fall food.

meat pie....
make your favorite meatloaf recipe, line the bottom of a pyrex pie plate with the meat. Drain a can of corn and place on top of the meat and cover completely with mashed potatoes. Sprinkle top with breadcrumbs and bake. mmmmmm
sort of a cross between meatloaf and Shepard's pie.

or you can try to make Armenian/Greek meat pie...
use 1 box of filo dough or you can cheat and use puffed pastry. the meat filling has onions, garlic, pignoli nuts, and S & P to taste.
you can wrap them like turnovers and bake or fry
or you can be lazy like me and put half the dough on bottom and half on top and meat mixture in between and bake like a pie. you have to butter in between every few layers of filo which isn't very ww friendly

taco salad (DH's fav --- put tortilla chips in the bottom of a bowl, a big heap of cut up lettuce on top, chopmeat with taco seasoning, tomatoes, shredded cheese and taco sauce)

make your own hamburger helper type dish -- ex: i made mexican pasta one night by putting leftover pasta, leftover taco meat (chopmeat w/ taco seasoning on it), tostidos cheese dip, shredded mexican cheese and some tomatoes from a can w/ chiles in a bowl, heated it up, mixed it up and DH raved about it. it was a great way to use up leftovers and tasted amazing lol

Skillet rice and beef dish
1 lb. lean ground beef 2 cups water 1/4 cup KRAFT Italian Dressing 1/2 tsp. dried oregano leaves 3 cups chopped broccoli 2 cups instant white rice, uncooked 1/2 cup KRAFT Shredded Cheddar Cheese
BROWN meat in large skillet; drain.
ADD water, dressing and oregano. Bring to boil.
STIR in broccoli and rice; cover. Reduce heat to low; simmer 5 min. or until rice is tender. Sprinkle with cheese.

Stuffed Pepper Stoup from Rachael Ray. Easy and sooooo yummy.

2 tablespoons extra virgin olive oil (EVOO) 1 1/2 pounds ground beef sirloin Salt and black pepper 1/2 teaspoon allspice (eyeball it) 4 cloves garlic, chopped 1 large onion, cut into bite-size dice 3 green bell peppers, seeded and cut into bite-size dice 1 bay leaf 1 quart chicken stock 1 can crushed tomatoes (28 ounces) 1 cup orzo pasta 12-15 basil leaves, shredded or torn Grated Parmigiano Reggiano, to pass at table
Preparation
Heat a medium soup pot over medium-high heat with the EVOO. When the EVOO is hot, add beef and season with salt, black pepper and allspice. Brown the meat for 5 minutes then add garlic, onion, peppers and bay leaf and cook for 7-8 minutes, until tender.
Stir in stock and tomatoes and bring to a boil. Add pasta and cook to al dente, 7-8 minutes. Turn off heat. Fold in basil.
Serve in shallow bowls with grated cheese.

ground beef w/sauce, onions, peppers, Mrs Dash and minute rice. love it b/c I only need to clean 1 pan, so easy, cooks fast and it's yummy.
