What HEALTHY stuff you baking this Fall?

I'm looking for some new healthy dessert/bread recipes to try. Chat Icon

I don't have recipes to link, but I do a lot of soups, stews and chilis.

I make Vegetarian Chili which is so tasty, I don't even miss the meat.

I just made White Bean and Escarole Soup. Going to make Lentil, Sausage and Kale Soup next week.

Also I make more roast chickens in the fall/winter! mmmmmmm

Skinnytaste has an apple cranberry crumble that I've been looking forward to trying. I've also tried her chocolate chip oatmeal cookies and biscotti which were both pretty good.

Not sure if it qualifies as healthy but I remember people posting about pumpkin muffins last year. A can of pumpkin and a white cake mix.

Ooooh....can you post your cookie recipe



Sure! They are amazing. Not so healthy though. I think they are about 100+ calories per cookie.

Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup white sugar
1 cup light brown sugar
2 large eggs
1 tablespoon vanilla extract
1 cup canned pumpkin puree
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 cups chocolate chips

Directions
Heat the oven to 350 degrees F. Spray cookie sheets with nonstick spray.

Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger and nutmeg. Slowly beat the flour mixture into the batter in thirds. Stir in the chips. Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

Baked apples with oats, cinnamon, nutmeg, brown sugar.
Baked bananas sprinkled with cinnamon and served with a side of frozen yogurt.

I used to make that long pumpkin cookie recipe. I found a shortcut that cuts out a lot of fat. One can of pumpkin, one box of spice cake mix. Just the mix, not the cake ingredients. Beat together, add some Chico chips, bake for about 12-15 minutes at 350. So good, and they taste the same as the recipe I was using for 15 years!

Oooo, I have to try this. A friend just told me to do this with the spice cake and a can of pumpkin in a Bundt pan as a cake. I have to try it as cookies. And is that chocolate chips?

Exactly! I try to limit what you mentioned.

I love the easy cake mix recipes & while it has pumpkin in it...I don't consider it "healthy"

I completely agree about sugar and white flour, but why don't you like wheat flour? Do you try to eat a gluten free diet? I'm just curious because you seem like a fellow health nut and quite knowledgeable about food.

This is for a refined taste as it is not very sweet (i guess you could add more sugar) however DH and my mom love it and it does get better with age..I usually let it sit out overnight before eating.

Clementine Cake

5 unpeeled, seedless clemintines
6 Eggs
1 cup sugar
2 1/3 cups ground almonds or almond flour
1 heaping teaspoon baking powder

Boil clementines in a pot of water for 2 hours. Drain and when cool cut each in half. Chop finely. I use a chef knife but I assume a food processor would get the job doneChat Icon Preheat oven to 375. Butter and line 8" spring form pan. Beat eggs. Add sugar, almonds and baking powder. By hand mix in chopped clementines. pour into pan and bake for about 40 minutes. cover with foil and bake another 25 minutes. Cool completely before removing.

The wheat we consume today is not the same as it was fifty years ago. It has been modified So that it contains higher levels of gluten and other proteins(hence the increase in gluten intolerance or sensitivities). There are theories (dr. William Davis, author of wheat belly) that modern day wheat causes a leaky gut and inflammatory responses by the body. It also has a high glycemic index.
