Our go to is lemon pepper, lemon juice, and oil.

balsamic, olive oil, wochestershire, crushed cloves of garlic, honey, dijon, salt, pepper, red pepper flakes, and a ton of herbs (use what you have/like - rosemary, lavendar, mint, oregano, basil, thyme, fennel seeds, etc)

white wine, lemon peel (can just peel it in big strips), olive oil, salt, pepper, honey, dijon, rosemary, thyme, crushed garlic cloves

lime juice and zest, tequila, crushed garlic, red pepper flakes, salt, pepper, olive oil, oregano, agave, cilantro if you have it

orange juice, lemon juice, lime juice, crushed garlic, rosemary

soy, rice wine vinegar, honey or agave, sriracha, crushed garlic cloves

I usually use boneless skinless breasts. I can never find boneless thighs, plus I find that they aren't butchered as well so the chicken cooks more unevenly.

As for marinating overnight, it depends what is in the marinade. I will usually just do it for an hour or two. If a marinade has a lot of acid (citrus, vinegar, wine), it can start to "cook" the chicken ceviche-style if it sits in the marinade for too long, which you don't want to happen.

I don't use exact measurements, I just eyeball it. I'd say you just want to make sure there is a good balance of ingredients/flavors. I usually build the marinade in a big ziplock and mix it around and taste it before adding in the chicken.

I usually marinate day-of (like prepare it in the morning or a couple of hours before starting to make dinner).

I usually use skinless boneless chicken breasts or chicken tenderloins (have to skewer those usually).

there are too many marinades to list. You can use oils and spices/herbs or soy sauce or mustard or salad dressings or any citrus fruit... it depends on what the meal is. I try to match it to my side dishes or the overall theme of the meal.

Nope! That's the beauty of it. Hell, I've even just dumped some BBQ sauce out of a jar on it for the marinade.

GREAT!
For just us we typically do BBQ sauce...BUT we're throwing a little party & wanted something that could marinade so it would be flavorful & moist, hen just grill, no need to do more saucing... Know what I mean.

Maybe I'll do the italian flavors, since that's what I'm basically making for the party.

1/2 cup olive oil
1/2 cup lemon juice
3 tablespoons dijon mustard I use trader joes
1 tablespoon sugar
1 tablespoon salt
2 cloves of diced garlic
10 cranks of my pepper mill (sorry I don't have a real measurement here)

Marinate for a few hours

Yesterday I wound up eye balling olive oil, balsamic, onion, fresh lemon juice, garlic, soy sauce, ground pepper, onion slices, parsley, & chardonay-Dijon mustard. So good & flavorful & EVEN BETTER today cold!!!!
