Skin side down for me always...I LURVE crispy salmon skin!

Skin side down for me always...I LURVE crispy salmon skin!



Me too! I make sure to score the skin side with cuts every half inch or so so that the fish doesn't curl up. But I DO flip my salmon. I let it cook 2/3rds of the way through on the skin side and do a quick flip to finish the cooking on the flesh side. I serve it skin up.
