Yummy summer dinner recipes?
Looking for some summer, non-heavy dinner recipes....seems like everything I cook is hot and heavy...open to any ideas? DH hates hambuger which stinks...

I made a buffalo chix salad w/ celery and carrots, lettuce with chicken. I added blue cheese chunks/crumbles and a hot sauce marinade as the dressing.

We love doing quinoa and pasta salads in the summer. For quinoa salad we add cannelini beans and spinach with a lemon vinegarette, for pasta salad we add different veggies and cubes of mozz. cheese with a red wine vinegarette.
