Vegetarian (Vegan) recipes?
I'm looking for new vegan (or easily veganized) recipes for dinners. We tend to eat the same things every week and I'm going to be able to cook real meals for dinner for the next few months, so I thought I'd try out some new things.

I love a Cauliflower Casserole that I do...I don't have a recipe but you do something like this...
Cut up some red onions and saute them until soft, add some Tahini (dark is yummier) and some Soy or Tamari sauce. Steam your cauliflower broken into florettes, then mix up the steamed cauli and onion tahini mix, put it into a casserole dish, sprinkle it with breadcrumbs (fresh is better) bake until warmed through and breadcrumbs are crunchy and serve!
I might make it tomorrow!!!

I'm going to link a few r3ecipes I posted. Most are easily veganized and some were vegan. For example, I added cheese to the meatloaf recie and used real eggs instead of the morningstar egg substitute.

My adapted version of rachel's WW chicken friend rice
Makes 4 servings...
1 bag Moningstar Meal Starters Chik'n strips 1/4 c. vegetable broth 1 TBSP. reduced sodium Teriyaki Sauce 2 tsp. olive oil 2 larges eggs, lightly beaten (can use Morningstar Scrambles or leave out) 1 bag mixed veggies 1 large onion, chopped 1 1/2 cups cooked brown rice coriander , ginger (I did not use)
1. Spray large non-stick pan with cooking spray, heat. Saute chik'n until browned thoroughly. Transfer to medium bowl and stir in broth, Teriyaki sauce and coriander.
2. In the skillet, heat one tsp. of the oil. Stir-fry eggs until set, but still moist. Transfer to the bowl.
3. Heat remaining oil, saute the ginger, veggies and onion until tender. Add rice, continue to stir fry until rice begins to brown Add chicken mixture and heat through.
I used more olive oil and broned the chik'n in that instead of pam because the chik'n has very little fat in it.
