Meatball makers

For those of you who use bread instead of breacrumbs...what kind of bread do you use?

I make some really decadent meatballs.... the 'secret' is to replace the breadcrumbs with diced bread soaked in milk.... any white, wheat, or sourdough bread is fine, but its best if its a bit stale, and there isn't too much crust. Drain the remaining milk before adding the egg seasoning onion and meat.....

for super decadent burgers, I do the exact same thing with the bread and milk, followed by diced onion.... but I also add a bit of bacon grease (heart attack, I know... and don't care Chat Icon )

I don't know how "decadent" my meatballs are, so this might not compare to the above poster, but I always used Wonder White with the "round part" of the crust removed. I just tore it into little itty-bitty pieces and mushed 'em all up with everything else. It definately helps keep the shape, and I've never had any complaints.

oooh, bobby flay just had a meatball throwdown!

the guy who won (who owns a restaurant in northport) explained his recipe...

1 lb chuck meat
4 eggs
bread
diced onion
parsley
garlic
salt and pepper

I think that was it... he gently combined them, and BAKED THEM (not fried-wierd, huh?) at 350. He then dropped them in a simple tomato sauce (tomatoes, garlic olive oil, basil) and simmered them for about 15 min....

this simple recipe from this guys grandma beat bobby!

I use anykind of day old bread that I Have in the house, white, wheat whatever. I throw it into the magic bullet blender and use it. Yummy! Also, sometimes I use Panko...Japanese bread crumbs, those are good too!

I always bake mine on 350 for about 20 minutes. I put them on a baking rack and then on top of a cookie sheet so that the extra fat drips off. I then take them out and place them in the sauce. They come out perfect and never fall apart.

Sometimes I'll use the trio of ground meat - the beef, veal, pork. DH likes the trio better than the all beef. I prefer all beef - oh well.......

I like the trio of meats too. I will have to try the bread soaked in milk. I will also try to bake them next time. I am trying to cut back a bit on the calories.

I love to cook... its my hobby... but I've never heard about baking meatballs before... this goes to show that you really DO learn something new everyday.

I'm totally trying your method out!!!!!

Grr - I just baked some on a rack and they stuck! Boo!! I guess the times that I've baked meatballs on a cookie sheet, I've sprayed a bit of Pam first.

I saw this one too & looked up the recipe , I made them ysterday, They canme out incredible,, Cept you forgot 1/2 cup mike & 1/2 cup of romano,

Yep, Maroni...his meatballs are my favorite. Just had them 2 weeks ago.
