Hey Laurie!
This is what I make all the time!! It's sooo good! And I have doubled it before when needed!

Vodka Sauce

1 1/2 cup Tomato Sauce
1/4lb. Prociutto, chopped. (Sometimes I buy the package from Trader Joes)
1/2 cup heavy Cream
1/3 cup Vodka
1/4 cup butter
3 cloves garlic finely chopped

I can use 1lb of Penne with this Sauce.

Melt Butter in Large skillet. Add Prociutto, & Garlic. Saute over medium heat.
Add vodka and keep stirring until Vodka is almost evaporated. Add tomato sauce, heavy cream. Salt & Pepper to taste. Simmer uncovered for about 10 minutes.

I got this one on here and I love it. I leave out the pancetta.

1 1/2 cup tomato sauce
1/4 lb. Pancetta or Prociutto, chopped finely
(this is a little expensive and really not nessecary. you can leave it out.. I usually do!)
1/2 cup heavy (whipping) cream
1/3 cup vodka
1/4 cup butter
2 to 3 cloves chopped garlic
1 small red onion, chopped small

1lb. penne or rigatoni

Melt butter in a large skillet. When butter is hot add pancetta or Prociutto, garlic and onion.
Saute over medium heat. Add vodka and stir until vodka is reduced by evaporation. Add tomato sauce and stir heavy cream and season with salt and black pepper.
Simmer, uncovered for approximately 8-10 minutes.

Prepare Pasta in large pot of salted water. Add penne or rigatoni and cook pasta until desired doneness. Drain pasta and add to skillet with sauce. Toss pasta and sauce over medium heat until the sauce coats the pasta.

Optional or alternate taste:
Pinch of red pepper flakes added during saute.

4-6 servings.

TY! I am going to try all of them! I have a huge jug of vodka I received as a gift, so I have plenty for all the recipes...
