Party Menu - please help

Ok, so I have no clue how to go about organizing my list of things we need for DS's baptism - please help with suggestions on amts/ what else we'll need! There will be ca. 50-60 people and that includes about 10 kids.

Food:

Starters
Antipasto
Shrimp Cocktail
Chips (doritos and chips & salsa)

Main Entrees
6ft hero - half American/half Italian
Trays (serve 10-12)
1- Sausage & Pepper
2 - Eggplant Parm
1 - Chicken Francaise
1 - Baked Ziti
Chicken nuggets (for kids)
Couple lbs plain pasta (for kids)

1 large tossed salad
5 loaves of bread


Condiments to buy:
Salt/Pepper
Parmesan Cheese
Butter

Desserts:
Small cross cake
Brownies
Mixed italian cookies
Ices for kids

Coffee - Caff and Decaf
Creamers
Milk
Sugar / Equal


Paper products
Table linens
Centerpieces (maybe just fishbowls with little bunch of flowers DIY)


Alcohol
300-350 beers
6 large bottles of wine



I was going to hire one server to help dish out food and for clean-up. Do I need 2?

Starters
Antipasto-I would do two trays
Shrimp Cocktail-at least 5 lbs worth, or get 1 pound trays at costco and put them on different tables.
Chips (doritos and chips & salsa)-I would also do this based on tables, figure out how many tables and put some on each tables....some potato chips and pretzels on one with onion dip, and then maybe doritoz on another, and then tostitos on another with salsa....people will munch as they walk around and talk to each other.

Main Entrees

Trays (serve 10-12)-You need more then one hero, if I were you I'd get one 6 foot american AND one 6 foot italian.

I would add a tray of chicken parm
1 - Baked Ziti
Chicken nuggets (for kids)
Couple lbs plain pasta (for kids)--how about a tray of french fries for the kids instead....there's ziti if they want macaroni.

5 loaves of bread-maybe only do 3 loaves of bread, and get a few dozen rolls...people can make sandwiches.

something for the kids to dunk the chicken nuggets in....BBQ maybe.

plastic knives, forks, spoons, napkins, get good strong paperplates so nothing spills, plastic cups for drinks-beer, wine, soda.

We never have servers, we always just do it ourselves..but if you're planning on just having the server take care of everything, I would have two.

What am I missing?

Is the party at your house? You might want to make sure you have a lot of big garbage bags, for garbage and for cans and bottles.
For the beers..I have a few party tubs that I fill with beer and ice since it never all fits in a cooler.
