Skirt Steak
Does anyone have a great recipe for skirt steak that leaves it very tender? TIA

I make this a lot and DH loves it!
I marinate the steak in a ziploc bag with:
1/2 cup olive oil 1/4 cup soy sauce 3 tblsp grill seasoning 3 tblsp apple cider vinegar.
(I eyeball the ingredients so I'm estimating on the amounts of everything. Just mix everything in the bag and give it taste)
I leave in the fridge to marinate for at least 24 hours (flip it once). The vinegar helps to breakdown the meat and it makes for a very tasty and tender steak.

I only eat skirt steak in the warm weather so I can grill it. It's the only way I like it!
I usually just make a very simple marinade of
Olive Oil Worstishire(sp) Sauce Salt/Pepper Garlic/Onion
No exact measurments as I usually just eyeball everything.

that's how i make it too.. then when its done on the grill, i take it out and slice it (against the grain) and wrap it in aluminum foil to sit in its juices for a little bit. YUUMM!

Also very easy and delicious is to marinate in Soy Vey Veri Teriyaki and then grill!

Marinate it overnight with Lime juice. lemon juice, fresh garlic, cilantro, salt and pepper then either cook it on the BBQ or fry it in oil on the stove!!!!

i use any type of teriyaki marinade, add some chopped garlic a little orange juice, coarse pepper and put it in a zip lock bag in the fridge overnight. I BBQ it the next day. If you leave it in the fridge for a few days, it will be even better.
Same thing with flank steak.
After it's done, let it sit on a cutting board for about 10 minutes and slice against the grain.

Carne Asada Marinade
Marinade: 4 garlic cloves, minced 1 jalapeño chile pepper, seeded and minced 1 teaspoon freshly ground cumin seed (best to lightly toast the seeds first, then grind them) 1 large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems) Kosher salt and freshly ground black pepper 2 limes, juiced 2 tablespoons white vinegar 1/2 teaspoon sugar 1/2 cup olive oil
I don't use the chile pepper or fresh cumin. Just the regular cumin spice works fine.

I love skirt steak. my favorite is on the grill- just salt with kosher salt and let the steak get to room temperature b/f you grill it. Never grill cold meat.
When I make it in the house- always in my cast iron pan- salt and when almost done cooking- squeeze lime.
