Brownie Help!

Hi!

I baked brownies- used a recipe that I have tried already. Last time they came out great....

This time they were hard as a rock!

Does anyone know why?

a few thoughts:

--were you using the same oven? sometimes different ovens, the same temp is different (not all ovens are as accurate)

--did you leave them in too long?

--were any of the things you needed to add any different (i.e. butter/margarine, oils, etc)

did you use butter vs oil or vice versa?

Same oven and same ingredients...


I may have left them in too long...I followed the recommended amount of time, but it preheated longer this time...

Maybe that was it?

Do you have an oven thermometer? I had the worst luck baking in my old apartment, because just setting the temp at 350, didn't mean it was actually 350. It didn't have a digital readout, so I never knew if was pre-heated enough or too much.

I've had that problem when I switch pans...I now have one pan i make them in all the time. I was using the stone pan and they came out hard all the time.

By the way, if you subsitute the oil with butter and the water with milk, they come out alot softer!
