any other vegans out there??
i've been doing the vegan thing for 6 months now and so far i really like it...but i haven't tried any of the recipes in my vegan cookbooks yet b/c i'm kind of afraid they won't come out good, since i don't have a lot of experience w cooking. i was thinking, maybe if i heard recipes i know have worked for other people i might be more apt to try them.
any recipes anyone would like to share?

I am a vegetarian, not a vegan. I do have a few vegan recipes though. My husband loves both of these, and he is so NOT a vegetarian (sux for him I am the one that cooks though!) The peppers are more labor intensive but totally worth it IMO.
Here you go...
Vegetarian Stuffed Peppers
4 large green bell peppers, sliced and seeded 1 package of Veggie Ground beef (I use Morningstar brand Grillers recipe starters. I just read the label and I am pretty sure it's vegan, but you should double check) 2 cups tomato soup or sauce 1 cup (prepared) rice or orzo 1/2 small onion, minced 1 teaspoon cumin 1 teaspoon chili powder salt and pepper to taste *optional: add chopped green chilies or hot sauce to make it zesty! *optional: sprinkle some vegan cheese on top
Mix veggie ground, onion, prepared rice, 1 cup of the soup, and seasonings in a bowl to create the stuffing.
Cover the bottom of a casserole dish with some of the extra soup (or sauce) and place the pepper halves in the dish to form cups.
Stuff the peppers with the rice stuffing mix you prepared and pour the remaining soup (or sauce) over the top.
Sprinkle with vegan cheese, if desired.
Cover and bake at 375 degrees F for 1 hour.
Cabbage Soup
3 small onions 4 carrots ¾-1 head of cabbage 6 cups vegetable broth 1 can cannelleni beans 1 can diced tomatoes (I used fire roasted) 1 bay leaf salt, pepper, garlic powder
1. Chop carrots; thinly slice/shred cabbage. Put off to side 2. Slice and sautee onions 3. Put 6 cups broth in large pot, on med-high heat. Add bay leaf, onions and carrots. Let cook for 20 minutes. 4. Add diced tomatoes and beans. Cook for 10 more minutes. 5. Add cabbage, salt, pepper, and garlic powder to taste. Cook for 15-20 minutes more (until cabbage is tender).
ETA: I am making a vegan ratatouille tonight...I will send you the recipe if it comes out good.
