I got this recipe from my Zumba instructor, I thought I would share:

For a tasty nutritious salad dressing, combine 2 red
peppers, ¼ cup chopped parsley, 1-inch grated ginger
root, 2 teaspoons lemon juice, 1-2 teaspoons ground
flax seeds in a blender. If the dressing is too thick,
add a little fresh water.
