Rainbow cookies
How difficult are they to make? I'm thinking of making them for DS's first bday, but I need them in his themed colors. Does anyone know where I could order them as a custom order?

They are pretty tricky to make - I've only made them twice. But if you cook and bake often you may have the skill and patience for it. From what I remember each layer is cooked separate and for some reason the edges are not perfect so when you layer you loose out on cake because you have to cut to make it look pretty. The colors are easy -thats just food coloring before baking. I bet a bakery could do it in the colors you want-I don't see why not, the color is the easiest part. I think they're relatively easy to make. A process, yes, but not difficult.

ITA. I LOVE rainbow cookies and while I don't enjoy making them, they really aren't difficult...just a process as PP mentioned.

ITA...and i think they taste so much better homemade! you can change the food coloring for whatever colors you like.

I make them every year for Christmas. They aren't hard to make per se, just time consuming. Here is my recipe (which always gets rave reviews)
1 can Almond paste -- 8 oz. 1 cup Butter -- softened 1 cup Sugar 4 Eggs -- separated 2 cup All-purpose flour 8 drop Red food coloring 8 drop Green food coloring ¼ cup Red raspberry jam -- Seedless ¼ cup Apricot jam 1 cup Semisweet chocolate chips -- 6 oz. Grease the bottoms of three matching13-in. x 9-in. x 2-in. baking pans (or reuse one pan). Line the pans with waxed paper; grease the paper. Place almond paste in a large mixing bowl; break up with a fork. Cream with butter, sugar and egg yolks until light, fluffy and smooth. Stir in flour. In another mixing bowl, beat egg whites until soft peaks form. Fold into dough, mixing until thoroughly blended. Divide dough into three Portions (about 1-1/3 cups each). Color one portion with red food coloring and one with green; leave the remaining portion uncolored. Spread each portion into the prepared pans. Bake at 350 deg. for 10·12 minutes or until edges are light golden brown, lnvert onto wire racks; remove waxed paper. Place another wire rack on top and turn over. Cool completely. Place green layer on a large piece of plastic wrap. Spread evenly with raspberry jam. Top with uncolored layer and spread with apricot jam. Top with pink layer. Bring plastic wrap over layers. Slide onto a cookie sheet and set a cutting board or heavy, flat pan on top to compress layers. Refrigerate overnight. The next day, melt chocolate in a double boiler. Spread over top layer; allow to harden. With a sharp knife, trim edges. Cut into 1/2-in, strips across the width; then cut each slrip into 4-5 pieces. Store in airtight containers.
eta - I don't bother with the apricot jam.
