With Lent coming . . . What are some of your meatless recipes?
I need some new ideas & mine are all carbs 
homemade pizza
eggplant parm
pasta with broccoli garlic & oil
spinach lasagna rolls
pasta with spinach in a light cream sauce
mac & cheese
breakfast for dinner - pancakes / omelets
veggie stir fry

Chana Masala (chickpea curry)
Baingan Bharta (Eggplant Curry)
Veggie Frittata
Veggie Enchiladas
Stir fry with Tofu
Portobello burgers or stuffed portobellos
Cacio e Pepe
Grilled asparagus with a poached egg on top
Goat cheese and candied walnut salad with mesclun greens
Veggie soups- Broccoli and cheese, stracietella (soup with spinach, orzo, and egg),

Shrimp scampi
This week I'm trying Cod with dill and butter
Salmon (Giada recipe)
Tomato salad (sometimes with arugula)
Any type of salad
Ravioli, gnocchi, cavatelli
Cheese quesadilla with guac and pico
Rice & beans

What are some of your meatless recipes?
besides pastas?
polenta with a mushroom ragu
sometimes i will just have vegetables for dinner- roasted potatoes or squash, sauteed greens, roasted veg, sauteed zucchini
veg enchiladas - either rolled or made into an enchilada lasagna - basically using corn tortillas (toast them first) as the noodles, refried beans as the ricotta, salsa instead of tomato sauce, using a mex cheese blend
stir fry, fried rice
eggs
big salads with cheese so they are filling
oh - i will often roast a ton of veggies and make roasted veg lasagna

Ooh can I have your Baingan bhurta recipe? I can NEVER get that one right and its myh favorite dish!

My Indian friend uses this too. She throws in a pinch of turmeric for colour- be careful it stains! My friend mentioned something about mustard seeds, but I haven't tried that with mustard seeds. It isn't in the recipe, so I never added it. I think you will get more of a roasted flavour if you grill the eggplant, but I haven't done that yet. Let me know how it works out for you.

-Salad greens of choice with roasted chickpeas, carrots, sliced roma tomatoe, avocado and a sprinkling of cheese ( can replace with any bean you like, add any desired veggies)
-Homemade veggie burgers with a side salad
-Tofu or tempeh stirfry over brown rice and veggies
- Vegetarian chilli
-Polenta bake - sliced polenta with tomato sauce, sliced zucchini and a sprinkle of cheese baked in the oven for 20 mins at 350. Pair with some more veggies on the side
- Eggs or egg whites cooked the way you like with lots of veggie sides
- Quinoa with beans and greens or additional veggies
- Burrito bowl: brown rice, black beans , avocado, salsa, veggies of choice a little bit of cheese or sour cream.
Can you eat fish during lent? If so, Dh loves fish and a bunch of good recipes, if you like. Good luck !

Onion Soup Casserole- But use texas toast instead of french bread!
I just made these the other night: Cream cheese, powdered sugar, and fruit grilled on a press. I used strawberries. SOOO good.
Then the usuals: grilled cheese, french bread pizzas, etc. I'm a meat and potatoes kinda girl so I don't have too many veggie recipes.
