milk that is about to expire

I have half a gallon of organic milk with an expiration date of today, no way DD is going to drink all of that, so I thought to make rice pudding with it so it doesnt get wasted...
Just wondering though, is that ok? Or does the fact that the milk is "on its way out" shorten the "shelf life" of the rice pudding?

It will be fine. The expiry date is actually a sell by date.. the milk itself is likely to be fine for another week. The cooked milk in the pudding will be fine and will not shorten the life of the pudding.

The sell by date is usually made by counting the number of bacteria within the milk at the time they are packaging it and then estimating how quickly the milk will have a level of bacteria which makes it no longer safe to consume (just learned about this in Microbiology). I think by cooking the milk to make rice pudding you will extend the shelf life for another week.
