Quick dinner ideas for a family of four...
My twins preschool teacher had some major surgery and the parents volunteered to bring the family dinner for the week. What would you make? Any quick and easy recipes?

I always make cranberry chicken with rice. I feel like there is always an abundance of pasta dishes in instances like this! lol
thick chicken breasts, I cut them into small pieces if trying to serve a lot of people.
mix together 1 can whole berry cranberry sauce, 1 bottle French dressing and one packet onion soup mix. pour over chicken and bake at 350 45-60 mins depending on how much/how thick the chicken is. serve with rice or egg noddles.

A quiche (like spinach) that can be frozen & easily reheated later if they have too much food.

Chicken cutlets are versatile and freeze well Chili in individual Tupperware (to freeze portions) Homemade soup in individual portions

ITA!!!! So yummy and a staple in our house. I make this in the crock pot

Quick dinner ideas for a family of four...
Chicken chili with tostitos, shredded cheese, and a container of sour cream. Pulled pork with sandwich buns and coleslaw. I also like the taco meat idea. I would avoid lasagna or baked ziti since they tend to get overdone in those situations.

How about making a batch of breaded chicken cutlets? They are good at room temperature, or reheated, they are kid friends, can be eaten on sandwiches for lunch, etc.
And then maybe some sides -- a mashed potato casserole or twice baked potatoes.
Or a roasted turkey breast with sides and gravy. They can use the turkey on sandwiches, too.
Or how about a quiche? They stay well in the fridge, individual pieces can be frozen, and you can add whatever ingredients they like (cheese meat bacon veggies, etc.). I make quick quiches with store bought frozen pie crust, and it's fool proof!
