How far ahead can I make...
Sausage and peppers for a party?
How about ala vodka sauce?
Can I freeze them?

I wouldn't make the s&p any more than 2 days ahead. You can freeze it, but the peppers will let out a lot of water when you defrost, so it may be too wet.
I don't think vodka sauce freezes well b/c of the cream in it, but maybe someone else will chime in.

I wouldn't make anything earlier than the day before and I definitely wouldn't freeze sausage and peppers. The veggies will be mush when you defrost it. If you could, and because it's so easy to make, I would do the vodka sauce that day......... Because of the cream I prefer it fresh. If you do make it the day before don't toss it with the pasta when you're ready to serve it otherwise the pasta will be really dry and blah the day of the party.

The vodka sauce you really have to do that day- it does NOT reheat well- the oil seperates and rises to the top and it just gets nasty.

I wouldn't do the S&P early - but I make huge pots of vodka sauce and freeze all the time -
JUST THE SAUCE - DO NOT MAKE THE PASTA ahead of time !!
It IS better fresh ..........but if you keep the sauce thicker, it's not watery when defrosted.
ETA - Hmmm, I don't use oil in my recipe. just a small amount of olive olil to cook the shallots/garlic .....but not enough that it separates ...........

I always make my vodka sauce ahead of time, just add the cream as I am reheating it to serve.
I have made sausage and peppers ahead of time too and frozen when about half cooked, so the sausage doesn't get overcooked.

You can make the vodka sauce, I have frozen it many times and never had a problem. You can make the sauce but add the cream the day off. S& P I wouldn't freeze.

I'm no help with the vodka sauce, but if this is for a summer party at your home, we often just make the sausage & peppers right on the grill.
I just cut up the peppers and onions and wrap in a few layers of foil with EVOO and seasonings. That you can do ahead of time.
We don't prefer ours in tomato sauce anyway......and they are quick and delicious this way.
