Tomatoes
My mother gave me a bunch of tomatoes from her garden.
Normally I'd make a quick sauce with them, but I'm trying to limit the amount of heavy carbs I eat.
I cheated and made pizza already the other night with some from my ILs garden. (Just cut in chunks and threw on fresh basil and some balsamic and provolone).
Any ideas of what I can do with them?
I have about 8-10 big ones, and a few plum size.
I plan to have tacos one night this week but will only need one for that. I also already cut up in wraps for my lunch.

make a salad out of them - chunk them and mix with herbs, olive oil, balsamic, s&p, thin sliced red onion. or you can make a cucumber tomato salad using herbs and white win vinegar. or a classic caprese.
with garden fresh tomatoes, you don't have to do too much to them!
eta i had a really good tomato watermelon salad, with pickled onions, with i think a red wine vinaigrette.

I would just eat them with some fresh mozzarella and basil and some balsamic vinegar. Yum!! Or maybe omelettes or quiche??

Try this recipe... you can cut down or eliminate the pasta. Very yummy tomato basil chicken

I do a chicken/tomato/olive dish. Get a package of thin cut chicken cutlets. Sprinkle both sides with kosher salt, pepper, basil & oregano. Grease a baking dish and put the chicken in it. Dice up the tomatoes and put it on top of the chicken, drain a can of olives and put that on top of the chicken too. Sprinkle with EVOO and bake it for about 30 min in a 350 degree preheated oven. I usually do this with canned tomatoes but I'm sure it'd be yummy with fresh tomatoes

I took some tomatoes and cukes from my mom's garden and made a salad with onions and a little olive oil and other stuff I threw in. YUM.

I LOVE summer tomatoes.
if they are really good ones, then tomato sandwiches! Good bread, good mayo, and tomatoes.
slice them with fresh mozzarella and basil and a little bit of balsamic.
throw them in any salad.
Slice them and drizzle with a little kosher salt and black pepper and drizzle with good evoo.

You can still make the sauce, just use spaghetti squash in place of the pasta!

Make them into a sauce and serve them over spaghetti squash - it is low carb !
