WWYD mexican food for party

For my DD's bday party we are doing Mexican food! I started out ready to cater the whole thing but then realized there are some things I could def do myself for much cheaper!

$30 for a tray of taco meat with sour cream, cheese and salsa. They say it feeds 12. We have about 22 people. but we will also have other food.

1 - Do you think thats a good price?

2 - Would you get two trays? We will also have a tray of quesdillas and enchiladas.

3 - would you cater this or make yourself?

If you have the time I would suggest making it yourself.
Chop meat is usually on sale for less than $3 per pound.
How much meat is in the tray?

I would make it. The good thing about tacos and enchiladas are you can make them ahead which is always what I look for when doing a big party. If you were going with the catered route, I would do two trays of taco meat but if you make it yourself you can do whatever amount you want (probably a pound for every 4-5 people).

Do it yourself! We just did this for my son's 2nd birthday. We had 3pounds of ground beef, Spanish rice, tortilla chips, soft tortillas, and hard taco shells. I made a cheese sauce, and we had lettuce, black olives, peppers, shredded cheese, sour cream and salsa. Basically you could make your own nachos, tacos, taco sald, or burritos. It was a huge hit and cost around $30 for it all. We easily fed 15 people. You could just add a second meat option like chicken or beans and be fine. It was a huge hit and very low maintenance to do.

Noooo it's not that cheap.

Yeah, I would make it yourself. UNLESS you are pressed for time, then I'd just order bc its pretty cheap.

I did my own for a party....
--chicken enchiladas (made the filling in the crockpot, then assembled trays prior)
--Mexican meatzza (cornbread then topped with taco meat, corn, beans, cheese, etc)
--cold & hot taco dip, salsa, guacamole
--Mexican wedding cookies
--Margaritas & sangria

I'd make it myself. You can cook up some ground beef w/ spices or a seasoning packet. And maybe do some pulled chicken in the slow cooker with spices. Its so easy and will be cheaper.

And I have an excellent salsa recipe - makes a lot and its easy. I make it often. Its a variation on pioneer womans recipe.

1 28oz can whole peeled tomatoes
1 can rotel
1/2 white onion OR 1 sm. onion
tsp cumin
bunch of cilantro
juice of 1 lime
salt (to taste)
pepper (to taste)
sugar (to taste, add a little to cut the acidity)
1-2 jalapenos (or any chili pepper)

chop everything up on pulse in the food processor (or blender) until desired consistency is reached. Let sit in fridge at least 3 hours before serving.
