Timing of Superbowl courses
For those of you who serve different courses for each quarter, how do you do it/when do you put each out? Obviously you would do the "main" food for half-time, but when exactly do you put it out? I was thinking of doing: chips/dips for 1st quarter (but would have them out when people arrive), hot apps at start of 2nd qtr, main food (ziti, sub) at half-time; don't know what to for 3rd quarter, and then dessert at start of 4th qtr.
Is this what others do? Or how do you do it? I know this sounds silly, but I'm just not getting it.

Timing of Superbowl courses
I have never based it on quarter. Just had apps and chips out when people are arriving, once all had arrived, about 30 min before kickoff or so, I bring out main dishes, buffet style, and allow people to pick as they like.

I dont do it by quarter either. I have the chips and dip ready to go for when guests arrive. Then when everyone is here, I'll put out the hot apps and main food.

Re: Timing of Superbowl courses
I don't think you need to serve anything for the 3rd quarter. Everyone should be pretty full from the apps/dinner so they can just relax until dessert during the 4th quarter.
If anything, you can put the chips and dip back out for anyone who feels like picking.

Re: Timing of Superbowl courses
I think your plan sounds good overall.
I don't think that you need to time it exactly by quarter, either.
I would put the "main course" out at halftime, but might put the hot apps out a little earlier than start of second quarter because I think people LOVE hot apps and tend to want to eat a lot of them! And I wouldn't want people to fill up too much on chips and dips if I had a lot of other food coming (and probably most people go hungry and planning to EAT).
Also, I would just put the desserts out when people seem to be done with the main food (or even if a few people are still picking). I wouldn't necessarily wait for the 4th quarter.
Since Super Bowl is a Sunday night, I know some people (at least in my crowd) will cut out a bit early, and you don't want people to start leaving before you get the desserts out. If you put the desserts out, people will start eating them (or even take something for the road).
Have fun!

Re: Timing of Superbowl courses
I would do chips and dips immediately when people arrive, hot apps. in the middle of the 1st quarter once everyone has arrived and settled in enough. they'll eat all of that stuff 1st and 2nd quarter. then serve main meal at half time. Then a break (or seconds for people with an appetite still) during 3rd. and I would serve dessert 4th quarter. Pretty much exactly what you posted, except hot appetizers sooner rather than later and yes a break between dinner and dessert.
