Need easy, family friendly, freezer meal (or easy crockpot) ideas.

For when DS & I first get home from the hospital after my c-section. My Dd is 2.5 and eats everything...my husband is the picky one, but too bad, lol! Looking for ideas for easy meals so we don't have to eat take out for a week. TIA.

I do a lot of freezing. I usually could things fully and then vacuum seal enough for one night. I didn't cook for weeks after DD was born!

Meatloaf

Burrito Pie

Lasagna

Jambalaya

Chicken chili

I also do pulled pork, meat sauce, taco meat, shredded buffalo chicken. You could also do a spiral ham and freeze portions. Pot roast or beef stew (I just try to avoid potatoes).

Well, what do you usually make/eat?

These are usually the best things frozen:

meatballs
sauce
lasagna
eggplant or chicken parm
soups (chicken/vegetable/noodle)
chili

I've prepared ahead of time half trays of lasagna, chicken cutlet parm, sausage and peppers, chicken noodle soup, meatloaf and chicken cordon bleu. We did take out a few times too. The first week was tough and these meals helped. Easy crockpot meals split pea soup with diced ham, chicken and dumplings, chili, lemon and herb chicken cutlets with yellow and red peppers and broccoli rabe and beef stew.

Thanks everyone! We eat a variety and that all sounds delicious. The only things I've ever frozen are chicken cutlets and spiral ham(and I forgot all about that and LOVE that idea!)

This may be a silly question, but when freezing soup, what do you freeze it in?

And do you freeze the entire meatloaf or cut it up and freeze the pieces?

I freeze soups in the plastic quart containers you would get frome Chinese takeout. I always save those to freeze stuff in. I make my meatloaf and freeze them in an aluminum loaf pan. I like freezing it whole because I feel doing them individually will dry out when reheating.

I have a DS that's 2 and a 6 week old...I've been making crockpot meals like chicken cacciatore, chili, soups, beef stroganoff, chicken with beans. If you google cooking light slowcooker recipes There's a link for 105 best slowcooker recipes, I've been using those. Other easy meals I've been doing are chicken cutlets, tacos, quiche, breakfast food, hamburgers etc. we eat the same stuff often but at least I'm cooking!

Crockpot Chicken and Stuffing
1 box Stuffing mix
1 can of cream of chicken soup 1/2 cup of sour cream
1/4 cup of water
3-4 chicken breasts

- Put the chicken in crock pot, Add stuffing on top of chicken, mix water, sour cream, and soup and pour over stffing. Cover and cook on low for 4 hours, fluff and serve!

Thanks for the suggestions, everyone! I have 3 weeks to go and plan to start cooking and freezing next week. :)

I freeze my soups in the ziploc tupperware circular long containers.

I freeze soup in tupperware and then take it out and vacuum seal in a foodsaver bag.

For meatloaf, I've done both a whole loaf or 2-3 slices. I let them thaw in the fridge overnight and then heat in the microwave. If I do a whole loaf I just cut it in half before heating to make sure it all gets heated through. I've never had any issues with it drying out at all.
