what who doesnt love a good casserole?!?! j/k oh no worries! and i know it is hard to find budget family meals that isn't loaded with crap ingrediants and you have to please toddlers on top of that. good luck!
i am going to keep thinking of things bc it also helps me too! lol there are some recipes or things i used to make that i need to revisit! it's a challenge to make budget friendly food that doesnt have you eating pasta every night.
im kind of in the same boat b.c my dd will eat everything and my ds is the picky one but he does eat peas and raw carrots. he prefers pasta and pizza but sorry, the kitchen is not going to serve that every night! anyhow, thinking of a few more things....
greek chicken pita or salad- but load them mostly with lettuce/tomato for you and Steve.. just use the chicken sparingly to save $$$
ground beef taquitos. or shredded chicken taquitos- you know the trick where you can use your kitchen aid mixer to shred the meat, right!? love this!
have you tried the ham and swiss slider sandwiches with poppy seed sauce? we are not big on cold cuts but once in a while, we will buy. or you can use left over from fresh cooked ham.

GOOD IDEA! I had taquitos on my list. Do you have a good recipe? I actually have 1 lb of ground chicken that I got on sale last week. Would that work??
I'm not a ham fan but we have done the sliders with sopressata and provolone and they are good! good idea too :)
Greek chicken is a great idea too. I can do homemade naan and make tahini-free hummus for us and fill with lots of cucumber and tomato for the adults.

i will check my binder at home. i have not made taquitos with ground chicken. i've made it with shredded chicken and ones with gorund beef. when i get home, i'll see what recipe i have or where i got it from. i haven't made them in a long while.
i think your family will really enjoy the ham and swiss sliders with poppy seed sauce. let me tell you, they are sooooooooooooo good. the poppy seed sauce is made with butter, minced onion, mustard and you pour the sauce over the sliders and bake- so divine!!! we use kings hawaiin rolls for this meal. i don't normally buy those rolls. i only buy them with the intent to make this meal.
the hoisin chicken or pork with rice noodles looked really good. give it a try and modify to omit any nuts. i'll try to gather some stuff and post recipes here or fb.
