This recipe is awesome! I make it a few times every fall. Definitely make sure you sift all the dry ingredients together. I also sometimes melt together some butter with cinnamon and sugar, prick the top of the baked loaves, and pour the mixture over the top. Heaven!

I use the Libby's recipe on the pumpkin can, or the premade mix they sell in a box this time of year. They're pretty good!

pumpkin bread!
The recipe I have makes FOUR 8" loaves or like 9 mini loaves (I use the disposable aluminum pans). I always add chocolate chips, and I kid you not, this is recipe gets raves every time. I need to make 4 loaves because it freezes well or it gets devoured in minutes.
Preheat oven to 375. Grease and flour 4 8” loaf pans, set aside.
Ingredients: 4 Cups white sugar 1 ½ Cups vegetable oil 1 29oz. can Libby’s Pure pumpkin (not pumpkin pie mix) 3 Tbsp. pumpkin pie spice 6 large eggs, beaten 1 Tbsp. pure vanilla extract
4 ¾ Cups unbleached all-purpose flour 1 Tbsp. baking powder 1 tsp. baking soda ½ tsp. salt 1 bag mini semisweet chocolate chips, optional
Stir flour, baking powder, baking soda and salt in a medium bowl.
In a large bowl, mix oil and sugar together with a whisk until combined. Mix in pumpkin and spice- beat well by hand. Stir in eggs and vanilla until thoroughly combined.
Stir in half the flour mixture, mix well, and stir in the remainder of the flour mixture. Add chocolate chips, if using.
Pour batter into prepared pans until they are ¾ full. Bake at 375 for 1 hour, or until cake tester inserted into center comes out clean.

I love the Downeast recipe pp posted, I use less cloves though.
Also the Trader Joe's mix is delicious!
